What each ingredient does

Mutton
Gives the broth its meaty flavor and body as it simmers in the water.
Pearl barley or rice
Releases starch as it cooks, thickening the broth slightly and adding body.
Turnip
Adds mild sweetness and earthy flavor as it softens in the broth.
Carrot
Adds natural sweetness and color as it cooks down in the broth.
Onion
Adds savory depth and aroma as its flavors release into the broth.

The step that matters

Skimming the foam as it comes to a boil. Foam carries impurities and proteins from the meat. Removing it early keeps the broth clearer and cleaner-tasting.
