Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fine cornmeal
Forms the thickened body of the gruel as its starch swells in boiling water.
Boiling water
Gelatinizes the cornmeal starch and sets the gruel's consistency as it cooks.
Sweet cream
Adds richness and a smoother, fuller mouthfeel to the finished gruel.

The step that matters

Stirring while the gruel cooks. Cornmeal can settle and scorch on the bottom of the pot, and its starch thickens unevenly without stirring, so frequent stirring keeps the texture smooth.

Swap the ginger

How well each one fits the dish's main ingredients (cream, bread, sugar):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Celeryfits about as well
  4. Gingerthe original

Fit is the average pairing score against cream, bread, sugar. Candidates are from the same food group and used in at least 100 recipes.
