Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef shank
Provides the meat that is cooked tender, then chopped and pressed into a sliceable loaf.
Beef cooking liquor
Moistens the chopped meat so the mixture holds together and stays juicy.
Coarse sea salt
Seasons the meat and helps draw out flavor and firm the mixture.

The step that matters

Add enough of the boiling liquid to moisten the mixture well. Chopped meat dries out quickly. Enough liquid keeps it moist and lets it bind when pressed, so the set loaf slices cleanly instead of crumbling.

Swap the summer savory
