Roast Beef

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Roast the beef

  1. Preheat the oven to 400°F (200°C).

  2. Dash 1 cup of boiling water over the meat to retain juices.

  3. Baste frequently with salt, water, and drippings.

  4. Roast for about 15 minutes per pound for rare beef, longer for well done.

Make the gravy and serve

  1. Remove the beef to a dish and skim the drippings.

  2. Add 1 cup of boiling water to the drippings.

  3. Stir in 1 teaspoon of flour mixed with cold water.

  4. Season with salt and pepper to taste.

  5. Serve with mustard or scraped horseradish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sirloin or rib pieces of beef
Is the main cut that is roasted, providing the meat and its flavour.
Drippings from the roast
Add savoury flavour and fat for basting and for the gravy base.
Flour
Thickens the drippings and water into a smooth gravy.

The step that matters

Roast for about 15 minutes per pound for rare beef, longer for well done.. Meat keeps cooking after it leaves the oven, and the internal temperature sets how pink or dry it becomes. Timing by weight is only a rough guide, so checking the centre with a thermometer helps avoid overcooking.

Swap the mustard

How well each one fits the dish's main ingredients (beef, flour, pepper):

  1. Capsicumfits better
  2. Carrotfits better
  3. Okrafits better
  4. Mustardthe original

Fit is the average pairing score against beef, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
