Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Mix all ingredients thoroughly.

  2. Shape the mixture into a roll or pack it into a greased loaf pan.

  3. Cover the top with greased paper or brush it with beaten egg.

Bake and serve

  1. Baste frequently with 1 tablespoon dripping in ½ cup boiling water.

  2. Bake in a moderate oven at 350°F (175°C) for about 2 hours.

  3. If served hot, accompany with Tomato or Horseradish Sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean veal
Forms the main body of the loaf and gives it a firm, meaty structure.
Fat salt pork
Adds fat that keeps the loaf moist and tender during baking.
Soft bread crumbs
Absorb liquid and help the loaf hold together with a tender texture.
Egg
Binds the mixture so it sets into a sliceable loaf when baked.
Lemon juice
Adds acidity that brightens the flavour of the meat.

The step that matters

Baste frequently. Veal is lean, so without regular basting with dripping the surface can dry out and toughen during the long bake; the liquid and fat help keep the loaf moist.

Swap the onion

How well each one fits the dish's main ingredients (veal, pork, bread, egg, lemon, pepper):
