Roast Pork

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Trim, weigh, and wipe the meat.

  2. If leaving the skin on, score it in 1-inch squares, cutting only through the skin.

  3. Place the meat on a rack in a roasting pan and lightly dredge with flour.

  4. Sear in a hot oven at 400°F (200°C), then reduce the heat to 350°F (175°C) and cook more slowly.

  5. Cook for 30 minutes per pound.

  6. Season when half-cooked and baste frequently with fat from the pan.

  7. Serve with Brown Gravy and Apple Sauce.
