What each ingredient does

Gooseberries
Provide the fruit flavor and natural pectin that helps the jam thicken.
Sugar
Adds sweetness and, when cooked down, helps the jam set and keep.

The step that matters

Cook until thick. Sugar and fruit pectin need enough heat and evaporation to set. Stopping too early leaves a runny jam, while cooking too long can make it stiff and dull in flavor.
