Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Make a tea biscuit mixture using 2 tablespoons of fat and 1 cup of flour.

  2. Roll out the dough thick and cut it into rounds with a medium-sized cookie cutter.

Fill and fold

  1. On one half of each round, place one-half of a date rolled in fruit sugar. Fold the dough over.

Bake

  1. Place the folded pastries in a baking pan.

  2. Bake in a hot oven at 400°F (200°C) for 15 to 20 minutes.

What each ingredient does

Flour
Forms the main structure of the dough, holding the filling inside the fold.
Fat
Tenderizes the biscuit dough, giving it a short, flaky texture.
Dates
Provide sweetness and a soft, moist filling inside the pastry.
Fruit sugar
Adds sweetness and helps the rolled dates brown lightly in the oven.

The step that matters

Folding the dough over the date. If the edges are not sealed well, the filling can leak out during baking. Pressing the edges firmly keeps the date enclosed so it stays moist and does not burn on the pan.
