Cheese Straws

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Roll the dough into a rectangular sheet ½ inch thick.

  2. Sprinkle one half with grated cheese, then fold the other half over it.

  3. Roll lightly to combine.

  4. Cut into strips 4 inches long and ½ inch wide.

  5. Bake in a moderate oven at 350°F (175°C) until golden.
