Puff Pastry

Ingredients

Directions

Prepare the butter

  1. Wash the butter in cold water until free from salt; pat and fold to remove excess water.

  2. Measure 2 tablespoons of butter and form the remaining butter into a flat cake; refrigerate.

Make the dough

  1. Place flour on a large platter, make a depression in the center, and add 2 tablespoons of butter, salt, sugar, and egg white. Blend thoroughly with your fingers.

  2. Gradually add cold water and mix to form a soft dough.

  3. Knead the dough until smooth and elastic.

Laminate and fold

  1. Roll into a rectangular sheet, place small pieces of butter on one half, dredge with flour, fold the other half over, and press edges together. Pat and press into a long sheet ½ inch thick.

  2. Fold the sides and ends to the center, cover, chill, and roll out as before. Lift the dough often and dredge the board to prevent sticking.

  3. Repeat the folding and rolling process six times.

Chill and cut

  1. Chill thoroughly, cut into shapes, and chill again until stiff.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Forms the flaky layers that separate sheets of dough, creating lift as it steams in the oven.
Flour
Provides the structure that holds the dough sheets together between butter layers.
Cold water
Hydrates the flour to form a dough that can be rolled into thin layers.
Egg white
Adds protein that helps bind the dough and strengthens its structure.

The step that matters

Keeping the butter cold while folding. If the butter softens and melts into the dough, it will not stay in distinct layers, so the pastry loses its flakiness. Chilling between folds keeps the butter solid.
