Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Veal Cutlets

Ingredients

Directions

Prepare the veal

  1. Wipe the veal, remove bone and skin, and cut into serving pieces.

  2. Skewer small pieces together with toothpicks.

  3. Cover bones and skin with cold water, heat slowly, and cook below boiling to make stock for gravy.

  4. Season the veal pieces with salt and pepper.

  5. Roll the veal in flour or dip in egg and then in bread crumbs.

Brown and braise

  1. Brown the cutlets in hot dripping in a frying pan, or in deep fat if crumbed.

  2. Place the browned cutlets in a deep saucepan or casserole and add the prepared gravy.

  3. Cook below boiling point for 1 hour, or until tender.

  4. Add Worcestershire sauce and parsley before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the dish and becomes tender through slow cooking below boiling.
Flour
Dry coating that helps the cutlets brown and gives the surface a light crust.
Egg
Binding layer that helps the bread crumbs stick to the veal.
Bread crumbs
Forms a crisp, golden outer coating when fried.
Stock
Liquid base for the gravy that keeps the veal moist during cooking.
Worcestershire sauce
Adds savoury, tangy flavour to the finished gravy.

The step that matters

Cook below boiling point. A gentle simmer lets the connective tissue in the veal soften slowly. Boiling toughens the meat and can break up the coating and gravy.

Swap the parsley

How well each one fits the dish's main ingredients (veal, pepper, flour, egg, bread, sauce):

  1. Capersfits about as well
