Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Trim, weigh, and wipe the meat.

  2. If leaving the skin on, score it in V shapes, cutting only through the skin.

  3. Place the meat on a rack in a roasting pan and lightly dredge with flour.

Roast

  1. Sear in a hot oven at 400°F (200°C).

  2. Reduce the heat to 350°F (175°C) and cook more slowly.

  3. Cook for 30 minutes per pound.

  4. Season when half-cooked and baste frequently with fat from the pan.

Serve

  1. Serve with Brown Gravy and Apple Sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork roast
Provides the main meat, whose connective tissue softens into tender meat during slow roasting.
Flour
Dusted on the surface, it helps the outside brown and form a light crust.
Fat
Basting with pan fat adds moisture and richness to the surface and promotes browning.

The step that matters

Searing in a hot oven before slow roasting. The high starting temperature browns the surface and builds flavour, and the later drop to a lower heat lets the centre cook gently without drying the outside. Skipping the sear or the reduction changes both colour and texture.

Swap the apple

How well each one fits the dish's main ingredients (pork, flour, pepper, sauce):

  1. Avocadofits better
  2. Limefits better
  3. Lemonfits better
  4. Applethe original

Fit is the average pairing score against pork, flour, pepper, sauce. Candidates are from the same food group and used in at least 100 recipes.
