Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Stuffed Tenderloin

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Trim and wipe the tenderloins.

  2. Make three or four lengthwise cuts with a sharp knife to spread the tenderloins about 1 inch thick.

Stuff and tie

  1. Sprinkle with salt and cayenne; spread one piece with the dressing.

  2. Place the other tenderloin over this; tie securely or sew along the edges.

  3. Place in a baking pan with a little dripping.

Bake and serve

  1. Bake at 350°F (175°C) for 45 to 60 minutes, basting every 10 minutes with 1 tablespoon of dripping in ¾ cup boiling water.

  2. Serve with brown gravy and red currant jelly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tenderloins
Form the main body of the roast, cooking to tender, juicy meat around the stuffing.
Stale bread crumbs
Absorb juices and give the stuffing body and a soft, moist texture.
Butter
Adds fat and richness, and helps the surface brown and taste savoury.

The step that matters

Tying or sewing the two tenderloins securely. Meat shrinks and firms as it cooks, so loose ties can let the stuffing escape or the layers separate. Secure binding keeps the roll compact so it cooks evenly.

Swap the parsley

How well each one fits the dish's main ingredients (bread, pepper, butter):

  2. Sagefits about as well
  3. Thymefits less well
  4. Nutmegfits less well

Fit is the average pairing score against bread, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
