Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein, which becomes tender as it cooks slowly below boiling.
Flour
Thickens the stock into a smooth sauce as its starch swells when heated.
Egg yolks
Enrich the sauce and add body and richness as they cook gently.
Chicken stock
Forms the liquid base of the sauce, carrying flavor from the chicken.

The step that matters

Adding the flour mixture to the stock. Flour mixed with cold water and added slowly disperses evenly; adding it all at once or to hot liquid clumps. Stir while cooking so starch swells into a smooth, thickened sauce.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, flour, pepper, egg):

  1. Turmericfits about as well
  2. Parsleythe original
  3. Tarragonfits about as well
  4. Nutmegfits about as well

Fit is the average pairing score against chicken, flour, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
