Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ingredients

Directions

Prepare the smelts

  1. Clean the smelts by cutting under the gills and removing the intestines.

  2. Sprinkle the smelts with coarse sea salt, wash, and dry.

  3. Skewer the smelts into shape.

  4. Season the smelts.

  5. Dip the smelts in flour, beaten egg, and bread crumbs.

Fry and serve

  1. Heat cooking fat until it browns a cube of bread in 60 seconds.

  2. Reduce heat after adding the fish to cook them thoroughly without browning too much.

  3. Cook the fish for 3 to 4 minutes.

  4. Drain the smelts.

  5. Garnish with lemon and parsley or watercress.

  6. Serve with Hollandaise sauce or Sauce Tartare.

What each ingredient does

Smelts
The fish itself; the main ingredient that is cleaned, coated and fried.
Flour
Forms a dry base that helps the egg and crumbs adhere to the fish.
Egg
Binds the flour to the bread crumbs so the coating sticks during frying.
Bread crumbs
Form a crisp, golden outer coating when fried.
Cooking fat
Transfers heat to the coating, browning and crisping its surface.

The step that matters

Controlling the frying heat. The fat must be hot enough to brown the coating quickly, but lowering the heat after adding the fish lets the inside cook through without over-browning or burning the crumb coating before the fish is done.
