Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Soak the fish in cold water for 1 hour, then drain.

  2. To remove the skin, place the fish skin side up in a pan and bake in a 400°F (200°C) oven for 10 to 15 minutes until heated, then lift out and remove the skin.

  3. Alternatively, cover the fish with boiling water in a pan, keep just below boiling for 10 minutes, then drain and remove the skin.

  4. Place the fish on a hot platter and pour over a rich white sauce; garnish with parsley.

  5. If the fish is too salty, soak it in cold water for 1 hour, then drain.

  6. Place the fish in a buttered baking dish, dot with small pieces of butter, and add ¾ cup of milk for each fillet.

  7. Bake in a 350°F (175°C) oven for 15 to 20 minutes until most of the milk is absorbed.

  8. Garnish with parsley and serve with toast points.
