Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the mixture

  1. Mix all ingredients together; add more milk if the fish is dry.

  2. Transfer the mixture into a buttered mold and cover it.

Cook and serve

  1. Poach or steam in the oven until firm in the center, about 30 minutes.

  2. Serve hot with Drawn Butter or Hollandaise Sauce.

  3. Serve cold on lettuce.

What each ingredient does

Eggs
Bind the mixture and set into a firm, sliceable loaf when cooked.
Soft bread crumbs
Absorb moisture and add body, keeping the loaf tender rather than dense.
Cooked fish
Forms the main body of the loaf and gives its flavor.
Milk
Adds moisture so the loaf stays tender while it cooks.

The step that matters

Poach or steam until firm in the center. Eggs set with gentle, moist heat. Cooking too hot or too long can make the loaf dry and rubbery, so check that the center is firm but not overcooked.

Swap the onion

How well each one fits the dish's main ingredients (fish, bread, lemon, egg, milk, parsley):
