Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Select peppers of suitable size and shape for stuffing; cut a slice from the end and remove the tongue and seeds.

Make the filling

  1. Make a white sauce by melting butter, adding flour, and gradually whisking in milk until thickened; then add the meat and grated onion.

Stuff and bake

  1. Fill the peppers with the mixture and cover with buttered crumbs.

  2. Place in a baking pan and add a little hot water.

  3. Bake at 350°F (175°C) for 30 minutes.

  4. Serve as an entrée or luncheon dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet green peppers
Hollow shells that hold the filling and soften as they bake.
Flour
Thickens the butter and milk into a white sauce that binds the filling.
Butter
Enriches the white sauce and helps the crumbs brown on top.
Rich milk
Forms the liquid base of the white sauce, giving it body and a creamy texture.
Cooked veal, chicken, or ham
Provides the main savoury filling bulk and flavour.

The step that matters

Thicken the white sauce fully before adding the meat. Flour must be cooked with melted butter and milk until the sauce thickens; if it stays thin, the filling will be loose and may leak out of the peppers during baking.

Swap the onion

How well each one fits the dish's main ingredients (pepper, flour, butter, milk, veal):
