Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked rice
Forms the bulk of the croquette and gives it a soft, tender interior.
Egg
Thickens when cooked, binding the rice so the rolls hold their shape.
Butter
Adds richness and moisture to the rice mixture.
Milk
Softens the rice and keeps the mixture moist enough to shape.

The step that matters

Cook until the egg thickens. The egg must set firmly enough to bind the rice; if it is undercooked the mixture stays loose and the rolls may fall apart when shaped or fried.

Swap the parsley

How well each one fits the dish's main ingredients (rice, milk, butter, pepper, egg):

  1. Cinnamonfits about as well
  2. Nutmegfits about as well
  3. Parsleythe original
  4. Cardamomfits about as well

Fit is the average pairing score against rice, milk, butter, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
