What each ingredient does

Large oysters
Provide the main ingredient that is briefly fried until the coating is crisp and the inside stays tender.
Fine bread crumbs
Form a crisp, golden coating that browns during frying.
Egg
Acts as a binder that helps the bread crumbs stick to the oysters.

The step that matters

Fry the oysters for 1 minute. Oysters cook very quickly, and the coating browns fast in hot oil. Frying too long can overcook the oyster and make it tough, while oil that is not hot enough lets the coating absorb grease and turn soggy.

Flavor stand-ins for the tomato

How well each one fits the dish's main ingredients (oyster, pepper, bread, egg):

  1. Capsicumbetter flavor fit
  2. Asparagusbetter flavor fit
  3. Cucumberabout as good a flavor fit
  4. Tomatothe original

Fit is the average pairing score against oyster, pepper, bread, egg. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
