What each ingredient does

Tomatoes
Form the bulk of the sauce and give it body as they cook down.
Onions
Add savoury depth and body as they soften into the sauce.
Brown sugar
Adds sweetness and a rich, dark flavour as the sauce reduces.
Vinegar
Adds acidity that sharpens the flavour and helps the ketchup keep.

The step that matters

Simmering slowly until thick. Long, gentle simmering drives off water and concentrates the sugars and tomato solids. Too little time leaves the sauce thin and watery, while too much heat can scorch the sugar on the bottom of the pan.

Swap the onion
