Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Mix and sift the dry ingredients.

  2. Mix the milk and molasses; add to the flour mixture.

  3. Turn the batter into a greased mold and cover tightly.

  4. Steam for 3 hours for individual muffins, or 1 ½ hours for larger ones.

  5. Turn out of the mold onto a baking pan and place in a 400°F (200°C) oven for a few minutes to dry the outside.
