Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that sets the crumb as the batter bakes.
Eggs
Egg whites add lift and airiness, while yolks add richness and help bind the batter.
Sugar
Sweetens the cake and helps tenderize the crumb when creamed with butter.
Butter
Adds fat for flavor and a tender texture.
Baking powder
Releases gas in the batter so the cake rises in the oven.
Milk
Adds moisture and loosens the batter so it blends smoothly with the flour.

The step that matters

Folding in the egg whites. Stiffly beaten whites hold the air that lightens the cake. Stirring them in vigorously or too long knocks that air out, leaving a denser crumb.
