Boiled Frosting

Ingredients

Directions

  1. In a saucepan, combine sugar, cream of tartar, and boiling water; stir over low heat until the sugar dissolves.

  2. Boil gently without stirring until a soft ball forms when tested in cold water (238°F).

  3. Gradually cool the syrup; slowly add it to the stiffly beaten egg white while continuing to beat until thickened; add flavoring.

  4. Pour the frosting over the cake.
