The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Lemon and egg barely smell alike, yet cooks put them together in 44,316 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Provide the main body and rich flavor of the souffle.
Eggs
Egg whites lighten the mixture and yolks bind it as it sets.
Soft bread crumbs
Absorb moisture and add softness to the mixture.
Cream
Adds moisture and richness, keeping the souffle tender.

The step that matters

Folding in the beaten egg whites. Egg whites hold air that makes the souffle rise and stay light. Folding gently, rather than stirring, preserves that trapped air so the mixture does not deflate before it sets.
