Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the chicken

  1. Dress, clean, and stuff the chicken.

  2. Truss the chicken by tucking the tips of the wings under and pressing the legs against the body. Secure with a skewer and tie a cord around the skewer and across the back.

  3. Place the chicken on its back on a rack in a roasting pan.

  4. Cover the breast with strips of bacon or a paste made from butter and flour.

Roast and serve

  1. Start roasting in a hot oven at 400°F (200°C), then reduce the heat.

  2. Baste every 10 minutes with the fat in the pan or a mixture of dripping and boiling water.

  3. Turn the chicken during cooking to ensure even browning.

  4. Roast for 15 to 20 minutes per pound, plus an additional 20 minutes.

  5. Serve with brown gravy and bread sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter and flour paste
Forms a paste that covers the breast, shielding it and helping it brown evenly.
Dripping
Adds fat for basting, which carries heat to the skin and promotes browning.
Bacon
Its fat bastes the breast as it cooks, adding moisture and savoury flavour.
Bread crumbs
Absorbs liquid and fat in the stuffing, giving it body and a soft texture.

The step that matters

Basting and turning during roasting. Basting with pan fat keeps the surface moist and encourages browning, while turning the bird helps the heat reach all sides evenly. Skipping either can leave dry or unevenly coloured meat.
