Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the stock into a smooth sauce as its starch swells when heated.
Egg yolks
Enrich the sauce and add body as they thicken it gently when heated.
Chicken stock
Forms the liquid base of the sauce and carries the flavour.

The step that matters

Add the egg yolks. Egg yolks can curdle or scramble if the sauce is too hot or boiling when they go in. Keep the heat low and cook only briefly after adding them so the sauce stays smooth and thick.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, flour, pepper, egg):

  1. Turmericfits about as well
  2. Parsleythe original
  3. Tarragonfits about as well
  4. Nutmegfits about as well

Fit is the average pairing score against chicken, flour, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
