Why it works: Watercress and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 579 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Planked Fish

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Prepare the fish by removing bones.

  2. Place the fish skin side down on a fish plank.

  3. Brush the fish with melted butter and season with salt.

  4. Bake in a 350°F (175°C) oven for 20 to 25 minutes.

  5. Remove from the oven.

  6. Prepare hot mashed potatoes and press through a large pastry tube to form a border around the fish.

  7. Brown the potatoes in a 400°F (200°C) oven.

  8. Garnish with watercress or parsley and lemon.
