What each ingredient does

Eggs
Whipped whites and yolks give the souffle its light, airy structure and set it as they cook.
Spinach
Provides the main body and flavor, and its moisture is held within the set eggs.
Butter
Adds richness and a smooth, tender texture to the set custard.

The step that matters

Folding in the beaten egg whites. Folding gently keeps the air bubbles in the whites intact, which gives the souffle its lift. Stirring or deflating the whites makes the finished dish dense and flat.
