What each ingredient does

Large oysters
Main ingredient; the tender interior cooks quickly in the hot fat.
Fine bread crumbs
Form a crisp, golden coating that protects the oyster while it fries.
Egg
Binds the bread crumbs to the oysters so the coating stays on during frying.

The step that matters

Frying the oysters in hot fat. Fat at the stated temperature sets the crumb coating quickly and browns it before the oyster overcooks. If the fat is too cool, the coating absorbs oil and turns greasy; if it is too hot, the outside burns before the oyster is heated through.
