What each ingredient does

Cranberries
Provide the tart fruit flavor and the pectin that lets the mixture set into a jelly.
Sugar
Adds sweetness, balances the tartness, and helps the jelly set firm.
Water
Softens the cranberries so they can be cooked down and pressed through a sieve.

The step that matters

Cook without stirring until it will jell. Cranberries contain natural pectin, and sugar must be fully dissolved before this stage. Stirring can disrupt the forming gel, so the mixture should be left to reach the point where it sets as it cools.
