Proportions for Brown Bread

Ingredients

Directions

  1. Combine potato water, salt, and molasses in a bowl.

  2. Gradually add bread flour and Graham flour, mixing until the dough is soft.

  3. If a coarser bread is desired, increase the amount of Graham flour.

  4. Add the yeast cake and enough lukewarm water to form a soft dough.

  5. Let the dough rise for 10 to 12 hours.

  6. Shape into a loaf and let it rise again for 2 to 3 hours before baking.
