Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a stiff foam that gives the bake its light, airy structure.
Dates
Provide moisture and natural sweetness, giving the bars a chewy, soft texture.
Fruit sugar
Sweetens the mixture and helps stabilise the whipped egg whites.
Shelled almonds
Add body, crunch and a nutty flavour that contrasts with the soft dates.

The step that matters

Gently fold in the date and nut mixture. Folding rather than stirring keeps the air whipped into the egg whites. Overmixing deflates the foam, leaving a denser, less airy result.

Swap the dates

How well each one fits the dish's main ingredients (sugar, almond, vanilla, egg, butter):

  1. Figfits better
  2. Coconutfits better
  3. Peachfits better
  4. Datesthe original

Fit is the average pairing score against sugar, almond, vanilla, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
