Baked Rice Custard

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the custard

  1. Combine cooked rice, brown sugar, butter, egg yolks, milk, raisins or currants, and vanilla or lemon rind in a bowl.

  2. Pour the mixture into a greased baking dish placed in a pan of water.

  3. Bake at 350°F (175°C) until set.

Make the meringue and finish

  1. Whip the egg whites until soft peaks form, then gradually add 2 tablespoons of sugar until stiff peaks form.

  2. Spread the meringue over the pudding and brown in a 300°F (150°C) oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg yolks enrich and set the custard, while whipped whites form the meringue topping.
Milk
Provides the liquid that the eggs set into a soft, custard-like texture.
Cooked rice
Forms the body of the pudding, giving it substance and a tender bite.
Brown sugar
Adds sweetness and a caramel-like flavour to the custard.
Butter
Adds fat for richness and a smooth, tender mouthfeel.

The step that matters

Set the meringue stiffly and bake the custard in a water bath. Whipping the whites to stiff peaks gives a meringue that holds its shape and browns evenly. The pan of water insulates the custard so the eggs set gently without curdling or weeping.

Swap the raisin

How well each one fits the dish's main ingredients (rice, sugar, butter, egg, milk, vanilla):

  1. Coconutfits better
  2. Figfits better
  3. Peachfits better
  4. Raisinthe original

Fit is the average pairing score against rice, sugar, butter, egg, milk, vanilla. Candidates are from the same food group and used in at least 100 recipes.
