Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pearl tapioca
Swells during soaking and cooking, thickening the custard and giving it a translucent, chewy texture.
Milk
Forms the liquid base that the tapioca cooks in and gives the custard its body and richness.
Eggs
Thicken the custard as they cook gently, adding richness and helping it set.
Sugar
Adds sweetness and balances the flavor of the milk and eggs.

The step that matters

Cooking the egg into the custard. Eggs can scramble if they meet hot liquid too fast. Adding the hot milk slowly while beating, then cooking gently over a double boiler, lets the egg thicken smoothly.
