What each ingredient does

Potatoes
Provide starch and body, giving the bread its moist, soft crumb.
Yeast
Ferments the sugars to produce gas that makes the bread rise.
Flour
Adds starch and structure to thicken the mixture into a workable dough.
Sugar
Feeds the yeast and adds sweetness to the bread.

The step that matters

Add the yeast only when the mixture is cold. Yeast is killed by high heat, so adding it to the hot potato mixture can stop it from rising. Letting the mixture cool first keeps the yeast alive to ferment.

Swap the potato

How well each one fits the dish's main ingredients (hops, flour, sugar):

  1. Mustardfits better
  2. Arrowrootfits better
  3. Parsnipfits better
  4. Potatothe original

Fit is the average pairing score against hops, flour, sugar. Candidates are from the same food group and used in at least 100 recipes.
