Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heavy cream
Whipped into a stiff foam that gives the mousse its light, airy structure.
Chopped blanched almonds
Add nut texture and crunch between the layers of cream.
Sugar
Sweetens the whipped cream and balances the richness of the fat.

The step that matters

Pack the freezer with ice and coarse sea salt. Salt dissolved in melting ice lowers the temperature below the freezing point of plain ice water, so the cream can freeze solid. Plain ice alone would not get cold enough.

Swap the almond

How well each one fits the dish's main ingredients (cream, sugar, wine):

  1. Chestnutfits about as well
  2. Almondthe original
  3. Hazelnutfits about as well
  4. Pistachiofits less well

Fit is the average pairing score against cream, sugar, wine. Candidates are from the same food group and used in at least 100 recipes.
