Jellied Chicken

Ingredients

Directions

Prepare the chicken

  1. Boil the chicken in minimal water until the meat easily separates from the bones, retaining about 1 pint of the water.

  2. Remove all bones, skin, and gristle from the chicken and finely chop the meat.

Set the jelly

  1. Skim the fat from the water, then add the butter, salt, pepper, and dissolved gelatine.

  2. Grease a mold with cream, then pour the hot chicken mixture into the mold.

  3. Refrigerate until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the cooking liquid into a firm jelly that holds the chicken together when cold.
Chicken
Provides the meat that is set within the jelly as the main body of the dish.
Butter
Adds richness and a smooth mouthfeel to the jelly.

The step that matters

Skim the fat from the water. Fat left in the broth can stop the gelatine from setting firmly and leaves a greasy, cloudy texture. Removing it first gives a clearer, cleaner jelly.
