Chicken Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Stew the chicken until tender and season the gravy.

  2. Remove the chicken from heat, take out the largest bones, and scrape the meat from the neck and backbone.

  3. Line a 4 or 6 quart pudding dish with biscuit dough, about ¼ inch thick.

Assemble the pie

  1. Layer part of the chicken in the dish, add butter, salt, pepper, and sliced boiled eggs.

  2. Add the remaining chicken and season again; optionally include new potatoes.

  3. Pour the gravy over the chicken, ensuring the dish is filled.

Bake and serve

  1. Cover with a crust of biscuit dough, making a hole in the center the size of a teacup.

  2. Brush the top with beaten egg white and bake at 400°F (200°C) for 30 to 45 minutes.

  3. Garnish with small celery leaves arranged in a circle.

What each ingredient does

Chicken
Provides the main meat, which becomes tender through slow stewing and forms the filling.
Eggs
Boiled eggs add firm, creamy slices that give body and richness to the filling.
Biscuit dough
Forms a tender, flaky crust that holds the filling and bakes to a golden top.
Gravy
Adds moisture and savory flavor, keeping the chicken from drying out as the pie bakes.
Butter
Adds richness and fat that carries flavor and adds a smooth mouthfeel to the filling.

The step that matters

Filling the dish completely with gravy. Gravy poured over the chicken fills the air gaps. Without enough liquid, the filling can dry out during baking, and the crust may sink or brown unevenly.

Swap the potato

The recipe marks potato as optional. How well each one fits the dish's main ingredients (chicken, butter, pepper, egg, biscuit):

  1. Asparagusfits about as well
  2. Spinachfits about as well
  3. Capsicumfits about as well
  4. Potatothe original

Fit is the average pairing score against chicken, butter, pepper, egg, biscuit. Candidates are from the same food group and used in at least 100 recipes.
