Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beefsteak (in the method)
Forms the main body of the dish, becoming tender through slow stewing.
Bread crumbs
Absorb the milk and butter to form a stuffing that adds bulk and moisture inside the roll.
Butter
Adds fat and richness to the dressing, keeping the stuffing moist as it cooks.
Salt pork
Renders fat for browning the beef and flavours the gravy.
Milk
Moistens the bread crumbs so the dressing holds together when rolled.

The step that matters

Brown the beef roll on all sides. Browning builds flavourful crust through the Maillard reaction, and the rendered pork fat helps it colour evenly. Pale meat means a weaker gravy and less depth.

Swap the summer savory

How well each one fits the dish's main ingredients (bread, pepper, butter, sage, milk, pork):
