What each ingredient does

Lamb
Provides the main meat, which becomes tender through slow, gentle stewing.
Salt pork
Adds fat and savory flavor to the stew and gravy.
Onions
Add sweetness and aroma as they soften in the stew.
Potatoes
Add starch and body, helping thicken the stew and absorb flavor.
Flour
Thickens the gravy when moistened with milk and cooked in the liquid.

The step that matters

Heat the pot gradually and stew gently. Cooking the lamb slowly at a gentle simmer lets connective tissue break down into tender meat. High heat toughens muscle fibers and can leave the meat chewy, while gentle heat keeps it juicy.

Swap the onion

How well each one fits the dish's main ingredients (lamb, pork, pepper, potato, flour, milk, biscuit):
