Roast Leg of Pork

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Make a cut in the knuckle of the pork leg and fill it with sage, onion, pepper, and salt.

Roast and finish

  1. Roast the pork until half done, then score the skin in slices without cutting deeper than the outer rind.

  2. Remove excess fat from the roast, add flour mixed with a little water, and then add more water to achieve the desired consistency.

  3. Serve the gravy in a gravy boat alongside apple sauce and potatoes.

What each ingredient does

Pork leg
Provides the main meat, which turns tender and juicy as it roasts slowly.
Flour
Thickens the pan juices into a smooth gravy as it cooks in the liquid.
Sage
Adds a savoury, aromatic herb flavour that penetrates the meat from the stuffing.
Onion
Adds sweetness and aroma as it softens and flavours the meat from within.

The step that matters

Scoring the skin without cutting too deep. Cutting only through the outer rind keeps the meat underneath from drying out and lets the fat render, which helps the skin crisp.
