Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hard-boiled eggs
Form the main body of the pickle, absorbing the flavour of the vinegar brine over time.
Vinegar
Provides the acidity that preserves the eggs and gives the pickle its sharp taste.
Mustard seeds
Add pungent heat and a sharp, slightly bitter flavour that develops during pickling.
Ginger
Adds aromatic warmth and a gingery bite that carries into the eggs.

The step that matters

Let the eggs rest for 8 to 10 days. The eggs need time for the acidic vinegar to penetrate the whites and yolks and for the spices to flavour them fully. Opening the jar early leaves the eggs underseasoned and less stable.

Swap the garlic

The recipe marks garlic as optional. How well each one fits the dish's main ingredients (egg, vinegar, white pepper, allspice, ginger, mustard, horseradish):

  1. Tarragonfits better
  2. Turmericfits better
  3. Dillfits better
  4. Garlicthe original

Fit is the average pairing score against egg, vinegar, white pepper, allspice, ginger, mustard, horseradish. Candidates are from the same food group and used in at least 100 recipes.
