Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix the flour and powdered sugar.

  3. In another bowl, beat the eggs and add the milk.

  4. Combine the egg mixture with the flour and sugar, mixing well.

  5. Butter three saucers generously and fill them halfway with the mixture.

Bake and assemble

  1. Bake in the preheated oven for about 20 minutes.

  2. Once cool enough, remove the puddings from the saucers.

  3. Cut each pudding in half and spread a thin layer of preserve between the halves.

  4. Close the puddings and serve with cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the batter and give the puddings their structure as they bake.
Flour
Provides starch that thickens the batter and gives the puddings body.
Milk
Adds moisture and liquid that turns the batter into a tender custard-like crumb.

The step that matters

Bake in the preheated oven for about 20 minutes. The batter needs a hot, fully preheated oven to set properly. If the oven is cool, the puddings may stay wet in the centre and sink or fail to firm up.
