Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Coffee sugar
Provides sweetness and body to the syrup.
Egg whites
Whipped proteins that help clarify and give the syrup a light, foamy texture.
Gum arabic
Acts as a stabilizer that keeps the syrup smooth and helps the foam hold.
Bicarbonate of soda
Reacts with tartaric acid to release carbon dioxide, producing fizz.
Tartaric acid
Reacts with bicarbonate of soda to release carbon dioxide, producing fizz.

The step that matters

Keeping the two halves separate until serving. Bicarbonate and tartaric acid react as soon as they meet and release carbon dioxide. Mixing them early would drain the fizz before the drink is poured, so each half must stay separate until it is combined in the glass.

Swap the lemon

How well each one fits the dish's main ingredients (coffee, sugar, nutmeg, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits about as well
  4. Lemonthe original

Fit is the average pairing score against coffee, sugar, nutmeg, egg. Candidates are from the same food group and used in at least 100 recipes.
