What each ingredient does

Chestnuts
Pounded chestnuts give the stuffing body and a soft, starchy texture.
Egg yolks
Bind the stuffing so it holds together when the capon is filled and roasted.
Bread-crumbs
Absorb moisture and add bulk to the stuffing, keeping it from becoming wet.
Butter
Adds richness and moisture to the stuffing and helps the crust brown.

The step that matters

Browning the crust. Brushing with beaten egg and dredging with crumbs before browning helps form a golden, crisp crust. Browning too early or too little leaves the skin pale or burnt.
