What each ingredient does

Cauliflower
Forms the main body of the dish, cooking to a tender texture in the boiling water.
Baking soda
Raises the pH of the boiling water, which helps vegetables stay bright green and soften faster.
Hollandaise sauce
Adds richness and fat, balancing the mild, slightly bitter flavor of the cooked cauliflower.

The step that matters

Boil until the stalk is just tender. Cauliflower keeps cooking after it leaves the pot, and overcooking breaks down its cell walls, leaving it mushy and sulfurous. Checking the stalk for just-tender texture prevents this.
