What each ingredient does

Knuckle of veal
Provides collagen and bone, which release gelatin and body into the simmering liquid.
Onions
Add sweetness and aromatic depth to the stock as they soften and release flavor.
Carrot
Adds subtle sweetness and aromatic flavor to the long-simmered liquid.
Turnip
Contributes mild sweetness and vegetal flavor to the background of the stock.

The step that matters

Skim off any scum that rises to the surface. Scum is coagulated protein and impurities released as the meat heats. Removing it early keeps the stock clear and prevents off-flavors from mixing back in.
