Why it works: Chicken and pork match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 5,417 recipes. Both carry 2-furfurylthiol, which smells coffee, roasted. The science ↓

Roast Chicken

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the chicken

  1. Preheat your oven to 350°F (175°C).

  2. Dust the chicken with flour and place it in a roasting pan.

  3. If using pork, lay slices on the chicken breast; otherwise, place butter on top.

Roast

  1. Baste the chicken with butter using a wooden spoon, keeping the spoon cool when not in use.

  2. Roast for 15 minutes per pound, turning the chicken when one side is brown.

  3. Once cooked, remove the chicken from the pan.

  4. If using pork, pour off the fat and remove the pork.

Make the giblet gravy and serve

  1. Chop the gizzard and mash the liver, mixing with 1 teaspoon of flour.

  2. Pour the giblet liquor into the mixture, stir well, and boil on the stove.

  3. Remove the string and skewers from the chicken, place it on a serving dish with watercress around it.

  4. Serve the giblet gravy in a tureen.

What each ingredient does

Whole chicken
Provides the main body of the dish, cooking through as the roasting meat.
Flour
Dusted on the chicken and stirred into the giblets, where it thickens the gravy.
Butter
Adds fat that promotes browning and moisture as the chicken is basted.
Fat pork
Lies over the breast, adding fat that keeps the meat moist and flavourful while roasting.

The step that matters

Turning the chicken when one side is brown. Browning builds colour and flavour through the Maillard reaction, and turning helps the bird cook evenly and avoid scorching on one side.
