Boned Birds in Aspic Around Socle

Ingredients

Directions

  1. Mold boned birds in fluted individual molds.

  2. Decorate with hard-boiled eggs in a daisy design.

  3. Garnish the dish with parsley.

  4. For the socle, remove the crust from stale bread and cut the crumb to the desired shape.

  5. Spread the bread with butter and cover with finely chopped parsley.

  6. For a hot dish, immerse the bread in hot fat until golden brown.

  7. Alternatively, fill a well-buttered cake tin with boiled hominy and let it cool to retain the shape.

  8. For a rice socle, boil rice with three times its quantity of water and a little butter until very soft.

  9. Mash the rice into a smooth paste and press it into a buttered mold, placing a weight on top to compact it.

  10. Unmold and shape the sides with a knife and butter-stamp, then brush with egg yolk and briefly bake to brown.
